Pumpkin Waffles

Here is a recipe that my kids love around this time of year:

Pumpkin Waffles

2 cups flour
2 tbsp. baking powder
1 tbsp. cinnamon
1 tbsp. sugar
1/2 tsp. nutmeg
1/4 tsp. salt
4 eggs
1 1/2 cups milk
1 cup canned pumpkin
3/4 cup butter
1 tbsp. vanilla

Mix first 6 ingredients together in separate bowl, set aside. In a large bowl or mixer, beat 4 yolks (save whites). Add milk, pumpkin, butter, and vanilla to yolks. Mix well. Add flour mixture and mix well. Beat egg whites to stiff peaks ande fold into the batter. Cook in waffle iron. Must serve with buttermilk syrup.

Buttermilk Syrup

1 cube butter
1 cup sugar
1/2 cup buttermilk
1 tsp. karo syrup
1 tsp. baking soda
1 tsp. vanilla


Bring first four ingredients to a boil in large pan. Remove from heat and add baking soda and vanilla. Stir well. Mixture will expand to twice its size. Serve over Pumpkin Waffles.
